High-Protein Carb-Lite Pancakes & Waffles
A high-protein, carb-lite batch of pancakes or waffles made with half self-rising flour and half Petley Grain Low-Carb All-Purpose Flour.
Ingredients
- 1 cup self-rising flour
- 1 cup Petley Grain Low-Carb All-Purpose Flour
- 1/2 teaspoon baking powder
- 1 cup milk
- 1/2 cup water
- 1 tablespoon lemon juice
- 2 large eggs

Step-by-Step Instructions
- 1
Whisk the dry ingredients
In a large bowl, whisk together the self-rising flour, Petley Grain Low-Carb All-Purpose Flour, and baking powder until combined.
- 2
Add the wet ingredients
In a separate bowl or pitcher, whisk the milk, water, lemon juice, and 2 large eggs until smooth.
- 3
Combine the batter
Pour the wet mixture into the dry ingredients and whisk just until a smooth batter forms. Let the batter rest for 5 minutes so the flours and fibers can fully hydrate.
- 4
Cook pancakes
Heat a lightly oiled skillet or griddle over medium-low heat. Pour batter to form 6-inch pancakes and cook until bubbles form and the edges look set, then flip and cook until golden brown. Makes eight 6-inch pancakes.
- 5
Or make waffles
Preheat your waffle iron, lightly coat it with oil or butter, and cook the batter in batches until golden and crisp.
